  • Crystallised honey is also called ‘granulated honey’ or ‘candied honey’. It can be returned to a liquid state by warming.
  • Minimally processed honey is Raw honey. It can contain pollen, propolis, royal jelly and small particles of wax.
  • Filtered honey is honey of any type that has been filtered to the extent that all or most of the fine particles, pollen grains, air bubbles, or other materials normally found in a suspension, have been removed. In the process honey can be heated up to allow it to more easily pass through the filter. Filtered honey is clear and will not crystallise as readily as Raw honey, making it the preferred choice of many people for table honey.
  • Creamed honey, also called whipped honey, spun honey, churned honey, candied honey, honey fondant, and set honey, is processed to control crystallisation. Creamed honey contains a large number of small crystals, which prevent the formation of larger crystals that can occur in unprocessed honey. The processing also produces a honey with a smooth, spreadable consistency. Most people describe creamed honey as ‘Yummy’.
  • Dried honey has the moisture extracted from liquid honey to create completely solid, non-sticky granules. This process may or may not include the use of drying and anti-caking agents. Dried honey is commonly used to garnish desserts or as a flavour additive in a snack eg biscuits or potato crisps.
  • Comb honey is honey still in the honeybees’ wax comb. It is collected by using standard wooden frames in honey supers. The frames are collected and the comb is cut out in chunks before packaging. This job is labour intensive. Such traditionally harvested comb honey is called ‘cut-comb honey’.
  • Comb in honey or chunk honey is packed in containers consisting of one or more pieces of comb honey immersed in extracted liquid honey.
